Strawberry season is upon us! So, to enjoy the wonderful berries that summer has brought us, I’ve made you a fast and easy recipe featuring strawberries: microwave strawberry shortcake in a cup.
This homemade vegan strawberry shortcake takes just a few minutes to prep and is best enjoyed in the summer sunshine! This recipe can also easily be made low-carb, making a perfect microwave keto strawberry shortcake.
A microwave strawberry shortcake for two is made in a mug/cup to fix your dessert cravings in 5 minutes. It is a pretty much like a vegan strawberry shortcake cake without the need to bake a whole one.
In fact, this recipe is designed for one serving which is baked in a coffee mug in the microwave in less than 2 minutes. It can be easily doubled, though, for two mug cakes.
You likely have the ingredients for this easy vegan strawberry shortcake on hand already.
For the cake, you’ll need oat flour, maple syrup, soy milk, baking powder, vegan butter, and vanilla extract. For toppings, you’ll need fresh strawberries and vegan whipped cream.
To make this microwave strawberry shortcake keto friendly, I suggest you substitute the oat flour for almond flour. Do not use coconut flour as the resulting shortcake will be pretty dry.
You can also omit the maple syrup and replace it with your favourite keto sweetener.
