This tofu breakfast sandwich is protein-packed and simple. If your mornings are super rushed or you’ve run out of vegan breakfast recipes, you’ve got to try this easy breakfast sandwich.

How to cook tofu for breakfast sandwiches

This tofu sandwich does not require any marinating! To start, all you have to do is combine nutritional yeast (for that cheesy, eggy flavor), salt, black pepper, garlic powder, and cornstarch in a shallow dish.

Then, dip and press both sides of the tofu slices into the dry mix to coat and cook it in a frying pan! It literally could not get any easier.

Assembling your vegan tofu breakfast sandwich

First, take the avocado slices and spread them on the bottom layer of an English muffin. This tofu breakfast sandwich also works with a bagel (it’s especially delicious with an everything bagel!).

Then you top the avocado with a slice of tofu, 1 – 2 tomato slices, and vegan cheese before adding the English muffin top.

This recipe makes 4 tofu breakfast sandwiches. Keep them in the fridge and heat before serving for an on-the-go brekky.

Ingredients

Instructions

  1. Combine nutritional yeast, salt, black pepper, garlic powder, and cornstarch in a shallow dish.
  2. Dip and press both sides of the tofu slices into the dry mix to coat.
  3. Heat olive oil in a non-stick pan over medium-high heat. Add the tofu slices and cook for 5 minutes per side, or until crispy on both sides. Add more oil to the pan, if needed.
  4. Build the breakfast sandwich; Divide the tofu slices, tomato slices, avocado and vegan cheese between the toasted english muffins. Top with the other half of the English muffin and enjoy.
