This vegan poke bowl is a simple and delicious dish with a delightful blend of flavors and textures that are truly unique. It’s a great option for meal prep or a quick, on-the-go lunch.

  • 1 cup Brown rice (Dry)
  • 2 tablespoons Rice vinegar
  • 2 tablespoons Maple syrup
  • Ionized salt
  • 4 cups Baby spinach (Raw)
  • 1.5 cup Edamame (Frozen)
  • 2 Avocados (Slices)
  • 2 cups Cucumber (Cubed)
  • 2 cups Carrots (Grated)
  • Pickled ginger
  • 2 Nori sheets (seaweed) (Cut into thin slices)
  • Black sesame seeds (optional)
  • 1/3 cup Vegan mayo
  • 1 teaspoon Sriracha
  • 1/2 Lime (Juiced)
  • 1 teaspoon Soy sauce
  1. Begin by following the cooking instructions on the rice package.

  2. While the rice is cooking, prepare the other ingredients.

    • Slice the avocados.
    • Dice the cucumbers into small cubes.
    • Grate the carrots.
    • Cut the nori sheets into thin slices.


  3. In a small container, combine the sauce ingredients: sriracha, vegan mayo, lime juice, and soy sauce.

  5. Mix the cooked rice with rice vinegar, maple syrup, and iodized salt.

  6. Arrange the vegetables on top of the rice: cucumber, carrots, baby spinach, edamame, pickled ginger, and avocado.

  9. If desired, sprinkle with black sesame seeds.
